    Much of cowboy cooking is based on the tradition of the traveling chuck wagon, a kitchen on wheels, used to feed far-flung ranch hands, and campfire roaster oven cooking.

The versatile cast-iron pots known as Dutch ovens were the range cook’s best friend, since they could be used for nearly every kind of cookery. The ever-present roasted corn, baked potatoes are prized for their taste and nutrition, were often given a more direct roasting treatment. Food cooked slow over an open fire formed a core of cowboys’ everyday fare.

 
 
	The Cowboy's roaster is the pioneer in introducing the Southern style "sweet potatoes" "big baked potatoes" and "chipotle corn" in the Northwest. 
The Cowboy roaster cooks with best fresh ingredients preferably locally grown/produced whenever possible. 
We believe in providing a old fashioned customer service with healthy and safe operation. 
Our objective is to respect the environment we are operating in, and leave the area as we found 
it, clean and unharmed.  During operational hours we are completely self-contained, requiring 
no permanent utilities. The roasted corn & potatoes roaster requires only 10 x 10 spaces to operate.
We carry all the necessary documentation and license to do business with the state, federal and local governments.  
We have contacted the county health departments to ensure compliance to their health standards and have
 acquired the documentation for required permits.
